Easy Valentine’s Day Recipes

 

When it comes to Valentine’s Day, most people go out for dinner. If you have a family this can get expensive. Try a few easy recipes to prepare a nice dinner for your loving family in no time.

 

Crock Pot

 

Get those slow cookers working. We often use it when we know we’ll be late getting home so dinner will be ready. The slow cooker is an asset on Valentine’s Day also. Most of the crock pots on the market today have a removable inner pot that is fashionable enough to serve at the table.

 

Cooking with a crock pot will free you up to do other fun Valentine’s Day things instead of standing in the kitchen. Some meal ideas for the slow cooker: beef roast with vegetables, chicken cacciatore, roasted chicken with vegetables, Swedish meatballs. The crock pot can be set to cook slowly (ten hours) or a bit faster (4 hours).

 

 Cook-ahead meals

 

Dinner can be harried even on Valentine’s Day. Watching boiling pots and hot skillets not to mention something in the oven can absolutely fry your brain. Free your mind to enjoy this day of love by trying a dish that is easy to prepare ahead of time and just needs to be baked on Valentine’s Day.

 

Casseroles are the easiest make-ahead dishes. They can feature beef, chicken, or pork. Even fish like salmon or tilapia can be marinated and dressed the day before and wrapped in foil to bake on Valentine’s Day. Avoid adding milk or eggs before you are ready to cook the meal. If the dish calls for cooked meat, cook and cube the meat the day before and combine all ingredients in the casserole dish when you are ready to pop it in the oven.

 

Five or Fewer Ingredients

 

Another alternative to the slow cooker or cooking ahead is using a recipe that has five or fewer ingredients. When you have fewer ingredients, prep time is cut dramatically. While the food is baking you can occupy yourself with spending time with the family.

 

With so few ingredients, kids can even help with dinner. To further cut preparation time, if anything such as vegetables need to be cubed, diced, or sliced so that the day before and refrigerate them. 

 

Pasta dishes fall into this category. Besides the pasta, you usually have sauce and some sort of meat or seafood. The pasta, sauce, and meat can all cook at the same time which saves time.

 

On Valentine’s Day, you want to be occupied with family and/or your sweetie. Slaving in the kitchen is not in the game plan. With a little pre-planning, you’ll spend less time in the kitchen and more time having fun

 Pantry Staples for Crock Pot Cooking

 
A slow cooker in the kitchen will pay for itself in no time. The time it saves when preparing meals makes it priceless. But, if you plan on using your slow cooker quite often, there are a few staples you may want to keep on hand to enhance your dishes.
 
  1. Beans – Beans are a cheap source of protein that cooks well. Each bean has its own flavor which is enhanced by the spices you use to cook them. Beans can be used as a meal base when meat is present or if you are a vegetarian looking to create an easy dish without much fuss. Whether navy, lentil, Northern, or black, beans create some amazing slow cooker meals.
 
  1. Fibrous Vegetables – The average household has at least a few potatoes lurking around. They are a versatile food. Mash them, fry them, stew them, or throw them in the crock pot. Potatoes add density to soups, stews, and meals with meat. Because they, and other fibrous veggies like turnips and carrots, take longer to cook, they can be thrown in the cooker with the meat and allowed to cook all day.
 
  1. Fresh Herbs – Herbs can dramatically change the flavor of almost any meal. Herbs come dried, but release a better flavor if they are fresh. You can grow your own herbs in the house in small pots. All you need is a sunny spot, good soil, and water. Home grown herbs can be dried to extend their life, making them easy to keep around without worrying about wasting them. Herbs are added near the end of the crock pot cooking cycle so their flavor infiltrates the cooked meal.
 
  1. Broth – Anything cooked in the slow cooker needs a liquid to start the process. Instead of always adding water, try broth. Chicken, beef, and vegetable broth are available in most grocery stores for very little money. Many varieties come already seasoned and it’s a quick and easy way to add flavor to meat dishes.  
 
  1. Flour or Cornstarch –Flour and cornstarch are used for thickening and sautéing. Applying a light coating of flour to meats and sautéing them in a little olive oil will create flavorful bits of essence that can be added to the slow cooker. At the end of a meal, adding cornstarch to the remaining liquid can create creamy gravy for dishes like rice or potatoes. Flour can also be used as a thickener, however cornstarch makes smoother gravies.
 
  1. Meat – This article is about pantry staples, but since meat is the centerpiece of most crock pot meals, be sure to have some of your favorites on hand (in the freezer of course). It can be any meat you choose. A tougher cut of meat will cook better and almost melt in your mouth when the dish is ready. Slow cooking will add moisture and tenderize meat that would otherwise dry out and be tough when cooked in the oven.
 

With these ingredients on hand, you can create any number of basic meals in the slow cooker. By keeping them on hand, you’ll have a variety of dinner ideas without the hassle of running to the store or searching for an answer when asked “What’s for dinner?”

Chocolate Love Me Hearts

 

Here’s something just in time for Valentine’s day! What could be better than chocolate and love?

What You Need:

 

8 (1 oz) squares milk chocolate

 

How to Make It:

 

Place the chocolate squares in a microwave safe bowl.

Microwave on high 1 minute remove the bowl and stir.

Continue at 30 second intervals until the chocolate is completely melted and smooth being sure to stir after each 30 seconds.

Allow the mixture to cool about 5 minutes.

Lay wax paper on a flat surface and spread the chocolate mixture on the wax paper to desired thickness.

Place the chocolate on the wax paper in the refrigerator for 10 minutes or until the chocolate is firm but still pliable.

Remove and place on the flat surface.

Use heart shaped cookie cutters of different sizes to cut out the solid chocolate hearts.

 

Serving Size:  24 to 32 hearts

 

Use these chocolate hearts in Easter baskets, at place settings or just hand them out throughout the day. 

You can add a little flavoring such as orange, lemon or raspberry to the melted chocolate for a special treat.
